Study:
Processed Meats May Up Cancer Risk
(Honolulu, AP, 4/21/05)
Beginning in the early 1990’s, Ute Nothlings and fellow
researchers from the University of Hawaii's Cancer Research
Center and the University of Southern California gave 190,545
adults in Hawaii and California surveys to determine their
dietary habits. The team then tracked those who responded for
an average of seven years and found a correlation between
eating processed meats and developing pancreatic cancer.
Scientists speculate that carcinogens used in processing the
meats may raise the cancer risk; however, the American Meat
Institute disputes these findings, claiming that processed
meats are safe.
