Meats Differ in Effect on Colon Cancer
Risk

Dr. Douglas J. Robertson of the VA Medical Center in White
River Junction, Vermont, and team, studied 1,520 adults who
had had colon polyps removed. The investigators found that,
after four years, subjects who ate the most processed meats
had a higher risk of polyp recurrence than those eating the
least; and conversely those consuming more chicken had a
smaller risk of recurrence than those eating the least. The
researchers note that processed meats tend to contain high
levels of N-nitroso compounds, which have been shown to be
carcinogenic, and that polyps can become cancerous. They
suggest that processed meats be eaten “sparingly.”
