Researchers:
Cinnamon Fights E.Coli in Apple Juice

Erdogan Ceylan and Daniel Y.C. Fung of Kansas State
University, and team, added about 100 times the amount of
E.coli 0157:H7 bacteria typically found in contaminated food
to samples of apple juice. The researchers found that a
teaspoon of the spice, cinnamon, killed 99.5 % of the bacteria
in three days at room temperature. When the scientists added
the same amount of cinnamon plus either 0.1 percent sodium
benzoate or potassium sorbate, which are FDA- approved
preservatives, the E.coli fell to undetectable levels. These
findings suggest that cinnamon is effective in naturally
controlling bacteria in food.
