Wheat-Free
Foods May Contain Wheat: Study
(San Francisco, WebMD, 3/22/04)
When Ashley Lardizabal of the Food Allergy Research and
Resource Program at the University of Nebraska in Lincoln, and
associates, evaluated 140 grocery store items, they found that
about 20% of foods labeled "wheat-free" or "gluten-free"
actually contain wheat protein. These findings should serve as
a warning to people who have wheat sensitivities that, unless
tighter controls are instituted, they cannot rely on the
labels found on processed foods.
