Wheat-Free Foods May Contain Wheat: Study

When Ashley Lardizabal of the Food Allergy Research and Resource Program at the University of Nebraska in Lincoln, and associates, evaluated 140 grocery store items, they found that about 20% of foods labeled "wheat-free" or "gluten-free" actually contain wheat protein. These findings should serve as a warning to people who have wheat sensitivities that, unless tighter controls are instituted, they cannot rely on the labels found on processed foods.
