Red, Processed Meats Up Diabetes Risk
(NY, Reuters Health, 11/8/04)
Dr. Teresa T. Fung of Simmons College and the Harvard
School of Public Health in Boston, Massachusetts, and
colleagues, analyzed data on almost 70,000 women who had
been tracked for 14 years. The researchers found that
subjects who consumed a typical “Western” diet had a greater
risk of developing type-2 diabetes and that the risk
increased for those who ate more red or processed meats. The
investigators also noted that the risk of diabetes decreased
for participants who ate a “prudent” diet of “fish, legumes,
fruits, vegetables and whole grains.” These results suggest
that people should restrict their consumption of processed
and red meats.
