Buckwheat Good for Diabetics

When Professor Carla G. Taylor of the University of Manitoba in Canada and team fed buckwheat seed extracts to diabetic rats, the animals’ blood glucose levels dropped by 12 to 19%. These findings suggest that consuming buckwheat may be a safe, inexpensive way for diabetic humans to control their blood sugar, but clinical trials would have to be undertaken in order to verify the effect of this food on human physiology.
