Plant Compounds in Diet Help Lower Cholesterol

Dr. Richard E. Ostlund of Washington University in St. Louis and colleagues report that phytosterols, natural plant substances found in vegetable oils, may reduce cholesterol absorption. They fed 25 people high-cholesterol pudding, some containing regular corn oil and the rest containing corn oil from which the phytosterols had been removed. Subjects ingesting the phytosterol-free corn oil absorbed 38% more cholesterol than those receiving the intact oil.
