Study Suggests Why Red Wine Does a Heart Good
(NY, Reuters Health, 12/19/01)

British researchers at Queen Mary University of London, experimenting with cow artery cells, found that the polyphenols in red wine decrease endothelin-1, a protein that constricts blood vessels and decreases oxygen to the heart. This concurs with a report in "Nature" that found that polyphenols inhibit protein tyrosine kinases and compounds that inhibit these enzymes are known to suppress endothelin production. Phenophenols are found in grape skins which are removed to make white wines, but left on in red wine production
